Ingrèdiènts

  • 4 short & fat or 5 long & slim lèèks
  • 1 cup, loosèly packèd / 170 g brown sugar
  • 75 g / 2 ½ oz buttèr
  • ¼ tèaspoon salt
  • 1/8 tèaspoon pèppèr
  • 400 g block of puff pastry (at room tèmpèraturè)
  • ¼ cup / 40 g fèta (crumblèd)
  • Optional - a fèw sprigs of parslèy

Instructions

  1. You will nèèd an ovènproof frying pan. Thè onè I usè is 19 cm / 7½" across thè bottom and 28 cm / 11" across thè top (you can smallèr but may nèèd anothèr lèèk if you go largèr).
  2. If your pastry isn't at room tèmpèraturè, rètrièvè it from thè fridgè now to lèt it softèn a littlè.
  3. Rèmovè thè outèr layèr of thè lèèks (if thè nèxt layèr looks wrinklèd and a littlè soft, rèmovè that layèr also). Thèn chop off most of thè dark grèèn ènds down to whèrè thè lèèks look firm and hèalthy.
