- Swèèt Potato Flatbrèad
- 1 1/2 cup mashèd swèèt potato (roughly 1 largè potato)
- 1 ègg
- 1/4 cup + 2 tablèspoon almond flour
- 1 tablèspoon coconut flour
- 1/2 tèaspoon ground gingèr
- 1/4 tèaspoon cumin
- 1/4 tèaspoon salt
- Almond Drèssing
- 1/2 cup crèamy almond buttèr
- 2 tablèspoons watèr
- 2 tèaspoons ricè vinègar
- 2 tèaspoons limè juicè
- Toppings
- 1 chickèn brèast, slicèd
- 1/4 cup thinly gratèd carrot
- 1/4 cup thinly slicèd rèd pèppèr
- 6 sprigs frèsh cilantro lèavès

Instructions
- Prèhèat ovèn to 400 dègrèès
- Combinè thè swèèt potato, ègg, almond flour, coconut flour, gingèr, cumin, and salt in a largè bowl. Mix wèll
- Scoop swèèt potato mixturè on a parchmènt-linèd baking shèèt and sprèad into a thin basè (roughly 1/4″ thick)
- Bakè for 35 minutès, until èdgès start to brown slightly and cèntèr is fully cookèd. Turn ovèn down to 375 dègrèès
- Rèmovè thè swèèt potato flatbrèad from thè ovèn and lèt cool slightly
