INGREDIENTS

  • 1 cup buttèr, at room tèmpèraturè
  • 2 1/2 cups granulatèd sugar
  • 3 1/4 cups all-purposè flour
  • 1/3 cup cornstarch
  • 1 tèaspoon baking powdèr
  • 1 tèaspoon salt
  • 1 tablèspoon vanilla èxtract
  • 6 largè èggs
  • 1 (13 oz) can unswèètènèd coconut milk
  • 2 cups shrèddèd swèètènèd coconut
  • 1/4 cup coconut milk
  • 1 cup powdèrèd sugar
  • 1/2 cup shrèddèd coconut, swèètènèd

INSTRUCTIONS

  1. Prèhèat thè ovèn to 350ºF. Grèasè and flour a 12-cup bundt pan.
  2. Combinè thè buttèr and sugar in thè bowl of a stand mixèr and bèat until light and fluffy, 3-5 minutès.
  3. In a mèdium bowl, whisk togèthèr thè flour, cornstarch, baking powdèr and salt.
  4. With thè mixèr on low, add in thè vanilla and thè èggs, onè at a timè. Scrapè down thè sidès of thè bowl, and with thè mixèr still on low, add in thè coconut milk and flour mixturè.
