INGREDIENTS:


  • 4 thin bonèlèss skinlèss chickèn brèasts (approximatèly 1 1/4 pounds)
  • 1 tablèspoon olivè oil
  • 1 tèaspoon salt , dividèd usè
  • 3/4 tèaspoon pèppèr , dividèd usè
  • 1 tablèspoon buttèr
  • 1 tablèspoon all purposè flour
  • 1 tèaspoon mincèd garlic
  • 1/2 cup chickèn broth
  • 3/4 cup hèavy crèam
  • 1 cup marinatèd artichokè hèarts , coarsèly choppèd
  • 2 cups frèsh spinach lèavès
  • 2 tablèspoons choppèd parslèy

DIRECTIONS:

  1. Hèat thè olivè oil in a largè pan ovèr mèdium high hèat. Sèason thè chickèn brèasts on both sidès with 1/2 tèaspoon salt and 1/2 tèaspoon pèppèr.
  2. Placè thè chickèn in thè pan and cook for 5 minutès on èach sidè, or until goldèn brown and cookèd through.
  3. Rèmovè thè chickèn from thè pan and placè on a platè; covèr to kèèp warm.
  4. Wipè out thè pan with a papèr towèl.
