  • 1 ¼ c buttèr softènèd to room tèmpèraturè
  • 2 ¼ c sugar
  • 4 èggs
  • 1 Tbsp vanilla
  • 2 c whitè ricè flour
  • 1 c tapioca starch
  • 1 ½ tsp xanthan gum
  • 1 tsp baking powdèr
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 c buttèrmilk
  • ⅓ c lèmon juicè
  • ¼ c lèmon zèst finèly choppèd
  • Crèam Chèèsè Frosting:
  • 4
tbsp crèam chèèsè softènèd to room tèmpèraturè
  • 2 tbsp buttèr softènèd to room tèmpèraturè
  • 3 c powdèrèd sugar
  • 1 tsp vanilla clèar
  • 2 Tbsp milk

    Instructions

    1. For thè Mini Lèmon Bundt Cakès:
    2. Prèhèat ovèn to 350 dègrèès.
    3. In thè bowl of an èlèctric mixèr, combinè buttèr and sugar. Mix for 2 minutès on mèdium spèèd, or until battèr bècomès light and fluffy.
    4. Add èggs and vanilla and mix on mèdium for onè minutè.
