  • 1 cup unsaltèd buttèr, softènèd
  • 2 cups granulatèd sugar
  • 5 largè èggs, sèparatèd
  • 1 tablèspoon vanilla èxtract
  • 1 cup buttèrmilk
  • 1 cup flakèd coconut
  • For thè frosting:
  • 1 cup choppèd pècans
  • 8 ouncès crèam chèèsè, softènèd
  • 1/2 cup unsaltèd buttèr,
softènèd
  • 1 tablèspoon vanilla èxtract
  • 16 ouncès confèctionèrs' sugar, siftèd

    Instructions

    1. Prèhèat ovèn to 350°. Grèasè and flour 3 9-inch round cakè pans.
    2. Whisk togèthèr flour and baking soda. Sèt asidè.
    3. Using an èlèctric mixèr on mèdium spèèd, bèat buttèr until fluffy. Gradually add sugar and bèat wèll. add ègg yolks, onè at a timè, bèating wèll aftèr èach addition. Mix in vanilla.
