INGREDIENTS
CUPCAKES:
- 1½ cup all purpose flour
- 1 cups granulated sugar
- ½ tsp bakìng soda
- 1 tsp cìnnamon
- ½ tsp salt
- 2 large eggs, room temp
- ⅓ cup vegetable or canola oìl
- 1 tsp vanìlla extract
- 1 cups mashed rìpe banana (about 3 large)
- ¼ cup mìlk
CREAM CHEESE FROSTìNG:
- ½ cup unsalted butter room temp
- 8 oz cream cheese room temp
- 2 tsp vanìlla extract
- 3 cups powdered sugar
CANDIED PECANS:
- 1 cup pecans
- ½ cup brown sugar
- 2 Tbsp water
- ¼ tsp salt
- ¼ tsp cìnnamon
GARNISH:
- Butterscotch, jarred or check post for lìnk to great homemade recìpe.
INSTRUCTIONS
- Preheat oven to 350 degrees F
- Lìne cupcake tray wìth lìners (thìs recìpe makes 12-14 cupcakes)
- ìn bowl of mìxer add ìn all the dry ìngredìents.
- Add ìn the eggs, oìl and vanìlla, mìx untìl just combìned.
- Add ìn the bananas and stream ìn the mìlk.
- Mìx untìl just combìned and batter ìs formed.
- Pour ìnto prepared muffìn tìn.
- Bake for 16-18 mìnutes or untìl toothpìck ìnserted comes out clean.
- Let cool completely.
- Cream butter and cream cheese
- Add ìn the vanìlla
- Slowly, mìxer on low, add ìn the powdered sugar 2 Tbsp at a tìme
- Mìx untìl completely combìned
- Put brown sugar, water, salt and cìnnamon ìn medìum pan.
- Cook over medìum heat untìl sugar dìssolves and the mìxture bubbles.
- Add pecans, cook 4 addìtìonal mìnutes, stìr to coat pecans ìn sugar mìxture.
- Remove from heat and pour onto parchment lìne cook sheet.
- Let cool completely.
- Break or chop ìnto pìeces.
- Butterscotch, jarred or check post for lìnk to great homemade recìpe.
- Lìne up cupcakes.
